I found a gem of a coffee bean supply company: CoffeeBeanDirect.com

Posted in Personal

As many know, most bean supply companies are out West.  Great for West Coast people, however so much so for us East Coast people who desire lower shipping costs and quicker bean arrival times.   These issues are now gone.  I have found a great green coffee bean supply company here on the East Coast that provides, in addition to lightening fast delivery times, free shipping on orders above 25 pounds!  The company is called CoffeeBeanDirect.com , and their URL is:  http://www.CoffeeBeanDirect.com

I have used them now for about 2 years.   I order on a Tuesday and I get my beans on Thursday, with free shipping.  I highly recommend them, not just to East Coast people, but also to West Coast people who wish to pay zero for shipping costs.

"The Colossus" - The BIGGEST Coffee Roaster Drum for BBQ on the PLANET!

"The Colossus", My newest all welded all stainless steel (14 gauge throughout!) Coffee Roaster Drum for BBQ that will roast up to 20 pounds of beans, has just been released for sale to the public.  It is the biggest coffee roaster drum for BBQ for commercial sale on Planet Earth.  Maybe on some other planet in some other solar system in some other galaxy there is a bigger one, but not here on Planet Earth!

Here are some pics:

It measures 10 1/2 inches in diameter by 34 inches in length (GIGANTIC!), and has 11 1/2 inch end cap plates.  It is constructed entirely of 14 gauge stainless steel (thicker than all known competitors stainless steel drums for coffee roasting on BBQ grills).  100% welded construction.  Drum weight is almost 40 pounds.

This drum is not for beginners or weaklings, for that matter.  With 20 pounds of beans it weighs close to 60 pounds.  To use this drum you need a BBQ grill that will both accomodate its size and have a rotisserie to rotate it (no small feat, but there are some rotisseries available).

For more information or to order one now please click here.  All Colossus drums hand fabricated by Len of CoffeeRoastersClub.com.

javaCOOL-CRC Coffee Bean Cooler & De-Chaffer just released

The javaCOOL-CRC Coffee Bean Cooler and Chaff remover comes fully assembled and ready to go!  You can choose from 2 different sizes:  1 pound capacity or 5 pound capacity.  The 1 pound size will cool down and de-chaff up to 1 pound of coffee beans; the 5 pound size will do up to 5 pounds.  Both are the same cost (I will ask what size you want after you place your order).  The only difference between the 2 is the size of the Stainless Steel bowl that the beans are placed in.   Cooling down your beans quickly is one of the most important and overlooked steps in the coffee roasting process.  And the javaCOOL-CRC takes care of this issue, ALONG with eliminating the chaff from the beans.    Available now at:  http://cgi.ebay.com/javaCOOL-CRC-Coffee-Bean-Cooler-for-Roaster-w-2-hp-Vac_W0QQitemZ190071985684QQihZ009QQcategoryZ57070QQtcZphotoQQcmdZViewItem?hash=item190071985684

Next Generation Ronco/Showtime & George Foreman Rotisserie Drums to be released soon

Hello.  I just got done developing the Next Generation Ronco/Showtime & George Foreman Rotisserie drums, and will be releasing them for sale soon.  They are 100% constructed by me.  This new design, which I am naming "GEN2" are different than my current drums in that I do not use pop off caps; actually one end has a swing/cap type door which allows extremely easy entry and exit of the coffee beans.  It is a really great drum and well worth the $129.95 price I charge for it (the aluminum/stainless steel version which I will first release).  Pictures are shown below.  Note that this is a proprietary design of mine.  Also note that the hand model is me. Introducing the new javaPRO-CRC ULTRA model

I have just taken a huge leap forward with my new javaPRO-CRC ULTRA model.

(This roaster is not based on the Ronco 6000 as is our regular javaPRO-CRC.  Also note that this new ULTRA model does not take the place of our regular javaPRO-CRC.   We are continuing, and will continue, to sell the regular javaPRO-CRC.  While this new model has some characteristics of our popular regular javaPRO-CRC model , it is an enhanced design and stands on its own as a totally separate and unique roaster.)

This model is made totally inhouse by us, and is a Proprietary Design that I will be getting patented.   Available here:   http://www.coffeeroastersclub.com/product_details.php?category_id=0&search_string=javapro-crc&item_id=136

CONSTRUCTION

Stainless Steel and Aluminum construction.  Double-walled construction with insulating material between walls.  Ventilation unit (made out of typical heat duct plated metal) incorporated onto outside of unit for roasting smoke removal.  4 foot expandable to 8 foot ventilation tube also included with purchase.

Drum measures 8" in diameter by 12" in length, and holds up to 5 pounds of unroasted coffee beans.  Drum is constructed of 20 gauge perforated stainless steel for cage, and 14 gauge non-perforated aluminum sheet for end caps.  Interior finwork of drum is of aluminum construction.  Drum has wide door that opens and closes which runs length-wise on drum to allow filling and dumping of beans.  (Drum does not detach from roaster).   Drum spins at 60 rpm to provide very uniform roasts.  Pan included to dump roasted beans in.

Roaster has bean cooling down process that uses extra ventilation fans incorporated into smoke exhaust unit to quickly evacuate heat from unit.

Roaster includes thermometer, thermostat control, timer control, on/off switch for ventilation unit, and master switch.  Entire roaster uses approximately 1800 watts 110 volts AC 60 hertz.  Heating element uses 1600 of those watts.  Grounded 3 wire construction uses typical 3 hole house outlet for use with 3 prong cord.

Roaster measures approx 12" high by 12" in depth by 16" in width.  Add on another 8" in depth for ventilation unit housing.  Roaster has latched front door that opens right to left.  Door has 4" by 4" square port hole (sealed with high temp ceramic glass) to allow you to see inside of roaster when door is closed.   When roaster is in operation interior is lighted.  Exterior of roaster is entirely constructed of 14 gauge aluminum, spray painted in high-temp flat black.

No pictures of roaster available at this time.  Please read item construction information for measurement information and roaster characteristics.

5 pounds of unroasted coffee beans also included in purchase.  javaPRO-CRC ULTRA model operating manual also included.

Getting ready for the Holiday Season

Posted in Personal

Just thinking about the upcoming Holiday Season causes a bit of anxiety.  Last year I was working non-stop fulfilling orders.  I can't imagine what this season will bring!

Anyhow, I guess I will be doing overtime.  Hopefully my energy reserves will not get depleted.  Lots of coffee drinking, for sure.

How To Roast Coffee

Posted in How To

HOW TO ROAST COFFEE

You can do a home roasting of coffee beans with one of our COFFEE ROASTER KITS  for your George Foreman or RONCO Showtime Rotisserie unit, or other rotisserie units!

The following instructions are guidelines to use when roasting beans using the George Foreman or RONCO units and our kits. Please note that our kits for BBQ's uses a similar roasting process, however a bit more involved. Full instructions for roasting are included with all of our Coffee Roaster Kit purchases.

ROASTING INSTRUCTIONS

Fill up the coffee roasting drum you get with our Coffee Roaster Kit with up to 1 pound of green unroasted coffee beans. Put the drum in the Rotisserie, and close the unit.

Turn roaster on, and initially set for 25 minutes. Depending upon the load on the circuit you are using, this will generally provide you a light to medium roast. Darker roasts will need more time.  Make sure you have the roaster in a VERY WELL VENTILATED AREA, as it will produce a lot of smoke due to the roasting process.  Outdoors is best if you are able to do this.

For the first few minutes the bean remains greenish, then turn lighter yellowish and emit a grassy smell.  The beans start to steam as their internal water content dissipates.

The steam becomes fragrant. Soon you will hear the "first crack," an audible cracking sound as the real roasting starts to occur: sugars begin to carmelize, bound-up water escapes, the structure of the bean breaks down and oils migrate from their little pockets outward.

After the first crack, the roast can be considered complete any time according to your taste.  Upon completion of "First Crack" we generally have a City Roast.

There will then be a short period of hardly any cracking, then you will hear a sharper "second crack" sounds.  At this point we are entering what is called a Full City Roast.  Much more smoke starts now, from the oils of the bean breaking down into various components, and the sugars in the bean carmalizing and burning.

Nearing completion of second crack we generally have what is called a French Roast.

As the roast becomes very dark, the smoke is more pungent as sugars burn completly, and the bean structure breaks down more and more.   The bean will first become an Italian Expresso Roast, further becoming a very very dark Spanish Roast, then basically charcoal.

When you get to the point that you desire, it is very important to turn off the Rotisserie and remove the Coffee Roasting drum, removing the end cap and pouring out the beans into an aluminum pan, or equivalent that will not melt or break.

CAUTION!!  MAKE SURE YOU USE HEAT PROOF MITS TO HANDLE THIS VERY HOT DRUM and all of its parts!

After dumping out the beans be sure to stir them continuously until they have cooled down completely.  Remember that they are still cooking, and that due to such you need to stop this cooking process by cooling them off as such.

You will notice "chaff", or bits of dry flakes that have dropped into the drip pan (now chaf collector).  Throw this away.  You will also notice such in the coffee beans you have stirred.  Please try to remove this chaf by either blowing on it outside, or vacuuming it up by holding a nozzle over the beans in the pan.  Be sure not to suck any beans up!

Again, you must let your beans "age" for a day (4 hours at the least).  Try to make only as much as you can use in 4 days ... any longer than that and your freshly roasted beans are not considered fresh any longer!

GOOD ROASTING!

Len

The History of Coffee

Posted in Trivia

Here is some Coffee Trivia for you:

The history of coffee starts with its humble botanical origins on the plateaus of central Ethiopia several thousand feet above sea level.

Coffee drinking legends stretch back to dates around 800 with Arabian stories of a mysterious black beverage with the powers of stimulation, which was also used as a medicine. Certainly by 1000 ad coffee drinking was prevalent throughout the Middle East. Coffee drinking in the West only really took off at the end of the 17th century.

Stories tell of a shepherd who discovered that when his flock of sheep ate a mysterious red berry they became restless, and it had the same effect on him when he tried it.

It is widely believed that coffee reached the Arabian peninsula around 600ad. It was highly prized by the Arabs and they prevented it from being exported to other parts of the world. The first coffee beans to reach India, were believed to have been smuggled out of Arabia by a Muslim Pilgrim called Baba Budan. He took seeds from Arabia back to India and planted them in the hills near Chikmagalgur in southern India. These trees even today produce about a third of India's Coffee.

The Emperor of Brazil Francisco Palheta wanted to start growing Coffee in Brazil and sent his emissary, Mello do Palheta to French Guinea to obtain coffee seedlings from the French. The French Governor was not prepared to give any seedlings to Palheta, but he so charmed the French Governors wife, that she sent him a bouquet of flowers with seeds hidden inside. These seedlings were planted in the North of Brazil but due to poor climatic conditions they were moved to the south, where conditions were perfect. This started the billion dollar Brazilian coffee industry.

The coffee bean originally was eaten. There is a story of an Arabian being banished to the desert with his followers to die. They lived off the coffee berry by boiling it and eating the fruit of the coffee berry. This saved their lives and was considered a religious sign that they should survive. The plant and the beverage were called Mocha.

Ethiopian tribes lived off coffee beans wrapped animal fats when on raiding parties.

Coffee roasting as we know it today started in Constantinople in the 14th C by the Ottoman Turks, and coffee house started springing up over Europe by the end of the 17th Century.

How Coffee Is Produced

Posted in Trivia
Coffee beans are actually the center of mature red coffee fruits, also know as cherries. These cherries grow on coffee trees. which grows from sea level to approximately 6,000 feet, in a narrow subtropical belt around the world. Coffee trees are an evergreen and grow to heights of 20 feet. To simplify harvesting, the trees are pruned to 8 to 10 feet. Coffee cherries ripen at different times, so they are predominantly picked by hand. It takes approximately 2,000 Arabica cherries to produce just one pound of roasted coffee. Since each cherry contains two beans, your one pound of coffee is derived from 4,000 coffee beans. The production starts with the handpicking of only the mature red coffee fruits (again, known as cherries).

The fruit is then removed from the seed by one of two methods. The natural or dry process, where the cherries are dried in the sun or in dryers, and the fruit is then separated from the bean by processing them through a mechanical husker. Or, by a superior soaking method know as the wet process, which produces beans which are referred to as washed coffees.

The two commercially significant species of coffee beans are: coffea arabica, and coffea robusta.

Arabica beans grow best at altitudes over 3,000 feet. This species produces superior quality coffees, which possess the greatest flavor and aromatic characteristics. They typically contain half the caffeine of the robusta beans. Arabica production represents 80% of the world's coffee trade, however, only 10% of this meets speciality coffee standards.

Robusta beans are usually grown at lower elevations. Robusta trees are easier to grow, produce higher yields, and are more disease resistant than the arabica species. Robusta beans usually possess a woody, astringent flavor. They are used when a lower price or additional caffeine is desired. A small percentage is typically added to many Italian espresso blends for the additional crema and complexity they contribute.

Coffee is best produced in high altitude warm climates that have a rich soil, such as countries that run along an ocean with warm tropical climates and good soil formed by eruptions of volcanoes. Over the years, countries in South America have earned the reputation of being the best coffee producers in the world. Countries such as Kenya, Nigeria, India, and now even Hawaii have been making their marks as the top coffee producers of the world.

Acid Reflux

Posted in Personal

Been dealing with acid reflux on and off for a while here.  I hear that drinking too much coffee can cause it.   I tried doing the Prilosec route, but I want to find a more natural way to deal with this.  I will try the Apple Cider Vinegar thing, many people say it helps.

CaffeBLOG is finally done. YEAH!

Posted in Personal

Today (September 17, 2006), I mark my official entry into the Blogosphere with the creation of CaffeBLOG.com .  It has been quite a project.  I wanted to create not just a blog for myself, but a community of blogs where people can go and get their own blog for free.  And on an excellent blog platform (which is not something easy to find).

Anyhow, here it is.  I hope it adds something nice to the web community.
